Lava Flow (Strawberry Piña Colada)
A frozen piña colada with a ribbon of strawberry purée swirling up the glass like lava. Rum, coconut, pineapple and strawberries.
- 10 min prep
- 2 drinks
- Hurricane glass
The Lava Flow is a Hawaiian bar favorite: strawberry purée poured into the glass first, then a creamy piña colada on top, so red streaks rise up the sides as it settles. It's as fun to make as it is to drink.
You'll blend in two stages, but the second stage only takes a minute, and you don't even need to rinse the jar in between.
Lava Flow (Strawberry Piña Colada)
Ingredients (2 drinks)
- 1½ cups frozen strawberries
- 1 oz simple syrup
- 2 oz light rum (for the strawberry layer)
- 2 oz coconut rum
- 3 oz cream of coconut
- 3 oz pineapple juice
- 1 banana (optional)
- 2 cups ice cubes
Instructions
- Blend the strawberries, simple syrup and light rum into a thick purée.
- Divide the purée between two tall glasses.
- In the same jar, blend the coconut rum, cream of coconut, pineapple juice, banana and ice until smooth.
- Slowly pour the colada down the center of each glass; the strawberry will push up the sides.
- Garnish and serve right away.
Garnish: Pineapple wedge and a strawberry
Glass: Hurricane glass
Tips for the best texture
- Pour the colada slowly over the back of a spoon for the best lava effect.
- The banana makes the colada thicker so the layers hold longer.
Try a twist
Use mango purée instead of strawberry for a 'sunrise flow.'
Blender, frozen drink maker or slush machine?
These amounts are written for a standard countertop blender. In an ice-shaving frozen drink maker, put the ice in the hopper and the liquids and any fruit in the jar, then run a full cycle. In a home slush machine, which freezes the drink itself, leave out the ice, replace it with about 1 cup of cold water or juice, and pour the mixed liquid into the bowl.
